Having a US company is a false good idea for processing online payments (obviously if you live there or invested a lot into the setup, its good). Processors will ask you many documents to open a merchant account.

Really? So what about those delaware/wyoming/new mexico solutions?

As I said, if the company helping you to incorporate the LLC is good, they will send you all the documents (but you will also need the EIN of the director for instance and not all the companies will give it to you)
Be sure to have all the necessary documents. In order to get a proper list, you can just fake a registration with any PSP and they will send you the requirements.
Then you can go to any company for the incorporation and show the list.

I used to have a LLC in Wyoming and it was a nightmare to retrieve documents when I was blocked by a PSP

If you have a company in your home country, you can also use intermediary companies (they have the EU/US structure, merchant accounts to process payments, do the accounting, and pay-out to your company your funds)
