About backlink relevancy?

My website is about kayaking niche. I contact a website which is related to health niche. Then the owner of that website write an article in a topic like that: "How kayaking is good for your mental health" (just an example) and drop my website's link into that article.

So is that backlink considered a relevant backlink (to my niche)? Or the targeted website must be a kayaking website?

This is important to me because it's hard to find a website that its whole content relevant to my niche to place a backlink.

If you are just going to have 1 or maybe 2 links about the health aspect, that is fine. It's when you suddenly end up with half your links coming from health related sites.
Kayaking you can also look at sporting aspect, fishing, kayak holidays etc etc.
