A/B testing on SEO landing pages using Google Optimize or something else?

Hey there,
I'm trying to see if I can set up an A/B test in a landing page SEO using a tool like Optimizely, G Optimize or something else like those.
The test is: we'd love to modify a part of a form, removing some fields, to get an uplift in terms of conversion rate from SEO thanks to an easier and quicker to complete form.

We are considering setting up another page (let's say page-b) that's an equalish copy of page-a, the original and already well-ranking page, without some fields in the form.

What I'm thinking is that we can set up a page directly in Optimize, and apply noindex + canonical to page-a.
Is it possible in your experience?
Is a thing that some of you have done in past and can tell something about the results, and if it damaged their rankings?
