8 articles too little?

So I made a site with 8 articles and non are less than 500 words. I am targeting a moderately easy keyword and want to know if 8 articles are enough? How many articles should I be looking to write?

Man, unless you are a SEO God you should write more... Put some meat on your sites, even if you have to spin one article or two to do it.

Put some effort into it!

I rank easy/medium comp keywords with sites that have 300 words... Sometimes 200..

That's so thin... You would be so much better getting some more keywords on there...
