I was able to find an exact match domain for a niche site with 8000 local searches a month.(According to google adwords tool) over 15000 total searches.
Thinking about making an amazon site using the wpzon builder.(but this costs $99 so any good alternatives would be greatly appreciated!)
Also how to capture peoples email addresses or would this be inappropriate for an amazon site?

The only problem with this site is that according to the adwords tool the competition is high. Might make a sort of journey with this and if this goes well will definitely be buying more domains.
I was using unique niche finder with 3 proxies but they all stopped working for some reason.

NB! Adwords competiton shows how many advertisers are there not how competitive the kw is. If the competition is high it`s better to use it for Adsense (depending how high the CPC is). Also i suggest you to use unique content and not to scrape it from Amazon (as the Zon Builder does).

adwords doesn't tell you the SEO competition, what you're referring to is competition between people bidding for adwords campaigns with that keyword..high is good in this case. If I were you I would analyze the 1st page on google (SEO competition) (backlinks, PR, social signals, etc) before jumping into the keyword.

To get the email of people, simply have them opt-in through content locking, signing up for an ebook or newsletter, etc.

Also make sure you only search exact results in the keyword tool and not broad. Broad are inflated numbers. Exact is much more accurate.

Ok before I give up on this domain, it is the plural of another domain which has like 3k searches a month exact, is this worth keeping?

It all depends on how competitive is the kw.

Well the singular form says it moderate according to ultimate niche finder and none of the top websites have many back backlinks and another few similar keywords are moderate and one hard. None o the top ranking sites have the exact match domain so am I ok to persie this?

are the top sites authority ? high pr? how much results with quotes ?
 
One 143 mill, one 74mill, one which is my keyword with very few searches is 4 mill. No of backlinks to tope page rank one is under 40 for all of these keywords, i will just have a look at the authority
 
all the sites i would be competing against are authority like amazon and ikea and other large retailers
