In 2121, probably hardware implants and anything cyberpunk related.
But seriously, I think crypto fever is really taking off right now. Not exactly a new niche, but I think it's a good one to keep an eye on as all this hype grows and crypto emerges into the mainstream more.

There's millions (Wikipedia has a list of emerging technologies, also think about services). Also, there's still plenty of good niches that are "old". A lot of people tend to chase the next big thing but there's absolutely nothing wrong with targeting boring, old and evergreen niches, in fact sometimes it's easier because everyone is chasing the next big thing. Not to say it's bad to do so (you can obviously make millions/billions if you're right) but it's a lot of hard work.
Me personally, I prefer sticking to evergreen niches (this can include emerging markets btw, just because it's an old niche doesn't mean a new emerging market won't see a boom, for example take a look at markets like Africa and India etc. where disposable incomes are increasing and internet usage is on the rise, what made people rich in places like UK/US etc. can make you very rich in new markets...). Improving an existing service/niche is also a way to make a lot of money. Find a problem, system, process etc. and improve it:
There's a lot of big players in the online World and many instances where companies get complacent because they dominate so much and people think that's the only option. There's always ways of improving existing solutions.
