So I hear a lot that more pages on your money site can help rank it, but what if your site is very micro niche and there isnt possibly 20 pages to write about the niche? Should one just make sub domains that dont even relate?

sub domains? No don't worry about it. 20 Pages is enough to get going. You want the pages so google knows what your site is about. There's plenty of biz sites with 6 pages on them that rank top 10 for their keywords.

No why you need sub-domain to rank it?you can do it by ranking yourself and add that 20 pages in it,keep the content good of your website.
