I would definitely recommend using a mobile proxy with an anti-detect browser. This way, you'll never have to deal with "blocked content" issues again.

For example, can the proxy provider know specifically which messages I send to whom, or can they only know which landing pages I visit?

In fact, 1.1.1.1 only encrypts DNS queries, and cannot encrypt all traffic and hide IP like a VPN. If you need stronger privacy protection and bypass blocking, a paid VPN will be more effective.

Depends on the proxy provider. Ask if they log your connections.

You are comparing apples with oranges. Data encryption has nothing to do with vpn/dns per se. If you are using https and using a trusted certificate (and have not accepted some invalid certificates as trusted), you are safe even with your normal internet connection. You don’t even need a vpn. They will know your ip (let’s say someone sitting in the middle of that request, e.g. mitm attack), but they will have no clue what data you sent and received.

As for your dns server, you can use another one like 8.8.8.8 or one provided by your isp. Again, it has nothing to do with encryption. It just gives you (oversimplified explanation. Google how dns works if you wanna find out) what ip is responsible for replying to the url request you just made.

Nothing more, nothing less.

VPN's change the IP, 1.1.1.1 just encrypts the requests

The 1.1.1.1 Cloudflare app is not a full VPN. It encrypts DNS queries but not all internet traffic, so it’s less secure than a paid VPN. For blocked content, use a paid VPN or combine a proxy with an anti-detect browser for better access.

1.1.1.1 is just one of Cloudflare's IPv4 DNS server IP addresses. I think the word you are looking for is CloudFlare WARP. That's their VPN service and is what powers iCloud's private relay too. Solid stuff. Not being able to choose server location was the only downside on any host device's location.

it will only help you with your DNS and hide your IP but if any site is able to get the IP wil get your real one not related to VPN if you want to completely change your location and chane IP and hide your information you need to get a real VPN or proxy depending in your needs but the app you mention can't be used for anything blackhat related.

When turning on VPN, is there any software that can show all packets going in and out of the internet?

It’s not a real VPN, just DNS, It helps with speed and privacy a bit, but doesn't hide your IP or encrypt traffic fully

i use 1111 on my ps5 but always with a proxy

WARP VPN by 1.1.1.1 encrypts both traffic and DNS requests, just put it into WARP mode (or WARP+DOH/DOT if you want DNS to go differently)
you can do it both using their APP for any website, or using WARP-CLI on your server..
