One more question I have thought of - I still need to decide whether to choose the US domain or the UK domain. I would like the site to rank well in both the US and UK, but I'm not sure if the UK visitors would just assume it is a US website because of the US domain. What are your thoughts...

Thanks for the advice. I'm not sure what you meant by the last part, as if the penalty was transferred to the 301, then it probably wouldn't be a good idea to start again on a new domain and 301ing the old domain in case it happens again?
