What is a rule of thumb for how many links I should have coming back to my site on any given blog post, facebook share, directory submission?

Guestblogging I mean writing blogs on others sites and allowing them to write blogs on mine. I have a question about building back links. When I am doing the anchor text, do I just need to stick to the same 10-15 keywords or any words are fine for the anchor text?
