I started making some Amazon sales via links that I sent via email. Then I found out that the links are supposed to be on a website so I've paused sharing the Amazon links. My question is, how likely is Amazon to catch on that clicks are coming from email rather than a site?

That is not correct. I just asked a rep at Amazon a two days ago if posting to social sites was okay, and the answer was yes. The only requirement is that the URL to your profile page on the social site be listed in your associates account as a site as well.
