Yeah, Google just isn't dropping sites; Google is disappearing them.

This is unfortunate. It sounds like there's considerable work ahead to restore the site's performance.

My site has been torpedoed and it exactly matches this timeline. This site is Legal Rx. It ranked with about 40 keywords on pages from 2 to 5. On September 21st, I started to notice keywords dropping instead of slowly climbing. Then it turned into an avalanche and ten days later all but two were gone. The two that remain, totally worthless in the 50s, continue to drop. I have done absolutely no spammy black hat stuff with this site. It's a long established site. This year I bought maybe 10 guest posts with very nice unique articles of 700 plus words. There was absolutely no keyword spamming. All of the articles full of useful information about a particular issue, all totally different. One or two anchors were keywords, but 90% of them were generic, natural or plain links. Basically, I bent over backwards to make sure this type of thing would not happen, but it's happened.

The timing is the key here. The Aug 18 spam update can’t explain a drop that already started on Aug 1, so split the month into separate windows instead of treating it as one hit. For Aug 13–17, compare GSC with analytics, server logs or an independent rank tracker — if real visits and positions stayed normal while GSC impressions dipped, that points more toward reporting than rankings

youve kind of already separated the two things so just do the boring version. export clicks and impressions by page, aug 1-12, then 13-17, then 18-25. if 13-17 shows impressions down but clicks holding thats the reporting bug, ignore. if pages drop on both from the 18th and stay down, thats the update and its real
then look at which pages, not how much. specific set of pages = chk what they have in common, same template, same link source, same content type. sitewide with no pattern is usually just the reshuffle and settles in a few weeks
also check the person comparing used the same date range both sides.. half the panic in these threads is a partial week vs a full one
