With how many blogs should we start a new blog?

I’m also new to this, but from what I’ve read, it’s better to start with a few quality posts rather than a large number. Maybe 5–10 solid articles to begin with, all helpful and well-written. I think Google values consistency and quality over just quantity, so it feels more manageable as a beginner too.
