I think this may be true for some but most are OK with free or lower plans as they advertise. I am using Dolphin Anty free plan and haven't any issues with Google Ads.

Why root is needed. What it's in here? Why change default DNS because it's provided by ISP and looks more realistic than of using others such as cloudflare?

Why you didn't use proxydroid and created your own? Also, do your app change TCP/IP Finger or Passive OS Fingerprint? Does your app require Root? I am just asking for this info so to know why you created your own and what benefit can I get if I do the same.
