Paypal is a double-edged sword you cant excluded definitively from you store especially if you're targeting the US - europe country , Paypal gives more trust and to them , I can tell you that when my paypal got shut my conversion rate dropped from 3% to 1% (iam targeting the scandinavian countries)

go get some agreement between you and the "ebook provider" , send them some screenshots from your emails between you and your customers , it may do the work , i had the same problem with them and thats what i did

If sellix dont have a problem with what you're selling then you;re safe , but anyway i'd try to list the product under a different name on sellix just to avoid any troubles , good luck

Just contact them and tell them more about your business + send them some screenshots of you emailing your customers with their digital products delivery and show them that you dispatch orders and everyone is happy
