I think i got your question. Its called title separator. I prefer to use that one, its more of a matter of taste imo.

From my WP experience - basically when u are running any more or less complicated theme (Avada, some bulky Divi layouts, block builders) - you may encounter troubles with SEO plugins. Yoast is poorly optimized for those (yet very good for minimalistic ones), try switching to All in one SEO pack...
