I dont believe ebay can see any details on file if you manually link your bank account but if you link your bank account by signing into your bank via eBay’s site than they can probably see all your basic information.

Use a eSIM compatible phone and look up all the eSIM trial plans that are offered for free! There’s a handful of companies that offer free eSIM trials and I also believe AT&T offers a $2 a day plan for eSIM! Can’t get any cheaper than that
