I guess it's because you unlisted/deleted the videos that got this channel to 55k subscribers, otherwise your content is monetizable

I don't have a cash cow channel, but if you make commentaries like on the video, youtube will accept your channel to their program you can still get copyright claim but for such videos I think it's unlikely

I'm pretty sure that youtube wants the content to be transformative for channels that reuse other people's content. If you record yourself walking, the content is yours, you don't have to transform it

I don't think you need to show face or voice, just add text commentary here and there and it should be enough to get monetized
