Well, the difference would vary by term. If you want to track a generic, possibly-local-oriented term like "pizza" there could be quite a difference (at least in the top results).
If you use a "US proxy" that is located in Brooklyn the top results will be for pizza restaurants near Brooklyn...

If Google thinks the keyword is a local term it may adjust the results based on the location of the IP address.
