Okay, okay - so enough SEOMoz whitehat crap - we are really trying to SMASH out some link building BUT in a smart way. We're sending out around about 2,000 emails a day across a couple of different niche sites - there are at least 10 customised parts on our emails, to ensure they are read, etc...

Everyone says both - I would agree but try and build a strategy to dissolve the AMOUNT of low quality links. Eg, 50% or something that you can build on. NOT everyone is perfect and Google knows that, so you can play off it a bit.
