It's good to have domain privacy but it's certainly not a 'must'. On the other hand, there is something even better than private whois, different whois. Just change it when you pay for each domain

I think your way is very good. If your pbn is less than 10 sites try to use different hosting provider for each, if it is bigger at least create different accounts for every hosting company you use twice.
I don't think that it worths anything(at least right now). Generally, I think even the best of the new tlds domains don't have any significant value. Anyway, if you really want to sell it, create a website, drive a little traffic to it and list it as a no reserve auction on flippa.
