How long does it take for the site to be fully indexed by big G? Also does publish date matter? Do we have to backdate it to match the old sites publish date? Asking cause i recently did buy a 10 year old domain on auction got it while it had traffic. And none of the restored pages are indexed...

When you mean restore. Is restoring the content keeping the same URL structure and diff theme ok? Or has to be 1:1 copy. Have you had experience on doing a fresh wordpress install publishing content as posts and keeping same URL structure.? Do you need to backdate the post date?
