Because their infrastructure is shit or they are too lazy to do disaster recovery. After working years in datacenters as an engineer, I can tell you data loss is extremely easy to prevent.

If what you are doing can afford it, I recommend going with bare metal servers and hiring a private server manager. It can be pricey but this way you will have full control of the server and data. Or just religiously do backups
