Pretty simple way to detect is by seeing if the browser is making any requests to the website while you are not connected to the vpn. Open dev tools and the network tab, clear the logs then disconnect from the vpn. Do what you do and then come back to that original tab. See if you found any...

Digital ocean 1gb vps can host 3-5k daily visitors and around 100 concurrent users. If that is not what you are getting out of it u need to first look for the ways to achieve that, then look into adding additional servers.

To use ftp on Linux without anything on it you need to install ftp server first on that machine. Alternatively to vestacp you could look into openlitespeed.org its a open-source version of litespeed server.

You can look at online tutorial on YouTube or at there website. It's very easy to install and use. My recommendation would be to go with apache + nginx

Vestacp is good just a reminder you do need to purchase the file manager extension to be able to upload files if you wish to do so through the control panel. Otherwise you can use any ftp client to do so. Also i believe it doesn't offer multiple php versions but i could be wrong.
