It's actually relatively clean compared to other page builders. I mean, is there a better option that can be done in under 2 hours for a full ecommerce website that can be customized any which way you want?

OP never asked that he needed to create a site in 2 hours. He wanted to learn wordpress. It is always a good idea to get the basics right if you are willing to learn something. That video is good for webmasters who are desperate to get their site up.
