Any recommendations for apps or sites or hacks in which I'll be able to view an account's **every** move? Who they follow, what photos are liked etc? IG only shows a small amount. Thanks

there are apps which can do that but you must be able to log in with the account ...... for a account where you have no access i doubt there is some on the market.

interesting concept but if you watch the follower and follows numbers daily you can kinda see what they are doing. Also tags they drop too in their captions.

You can also make a dummy account. Don't follow anyone but your competitor, so you can see some of his/her activity at this section:
