Quick 301

I have found 2 domains with 1-2 big backlinks that matches my vertical well. Rather then build a PBN etc could i do a 301 redirect straight to my eCommerce and is this safe?

There's no such thing as "safe" on seo. I suggest you to build related articles on those links, let them index and then redirect them to your moneysite.
 
I would suggest you to go for PBN links, it require more effort but you will see good results from that. 301 redirect is much easier but not safer to your moneysite.
 
Ok for these 2 sites I'm going to use a quick 301 redirect to $$$ site. What do you guys prefer building a wordpress then using a redirection plugin or just redirect from domains backend. Cheers

I'd recommend a 302 redirect so that your old indexed links aint totally removed from google in return for the new one. Both methods work but i'd rather keep the old links on a domain indexed aswell especially depending on how the domains ranked for set keywords. Just my opinion though and different people will have different views.

I dont fully understand what you mean. So you say when you do a 301 redirect on a domain will remove your indexed site pages from that domain?

When you do a 301 redirect the old pages will be de-indexed from google in return for the new domain, so it really depends on what your goal is with the redirect. The difference between the two is that 302 redirects are treated as temporary therefore old links arent de-indexed. Hope this explains a little better for you
