Because if your site gets hit , hacked or something goes wrong you have all your eggs in one basket and end up with no money coming in.
At least with 2 or 3 different niches, you spread the risk.

How many sites do you know that cover dozens of niches? Not that many, at least not successful ones. How many sites do you know that cover specific niches, or at least gave started by covering a single niche? Pretty many is my guess.

getting hit is one reason and having the resources to manage such a site is another. The ones that follow this model have a team 100 people pumping out content or are sites of big magazines.
