How big a PBN you need to rank is going to depend on lots of factors. How good your on-page is, how difficult the competition is, etc. By using a PBN you are increasing the authority of your site. Your site will then use that authority to rank for whatever your on-page indicates. So the answer, like all SEO questions, is... it depends. I got this question in a PM:

Link profiles are important. Unlike most, I actually go through the links of every domain we pick up. I compile the links from multiple sources and make sure there are current, live links that justify the metrics. I also look at the anchor text and archive images to make sure it is natural.

Nope. What would you be trying to see? How the sites look? They are basic one page sites. The ranking effect? With Google's Ranking Documents patent, you won't know the final effect for several weeks. And even then, one link is probably not going to do much for you.
