Unbelievable low engagement. 1-2%

Hey there guys.
At the moment I'm at about 60k Followers over 8 Accounts (4-9k). After recently posting again i was shocked by the ridiculous engagement. Between 1-2%. example: 8k account with 120 likes per picture.
I dont know if its the niche or the people im following that is/are bad. I need to say that im not posting very regular on these accounts. About 1 post a week (after the week they got about 5-10%)
On my main account i have about 5% Engagement.
Funny thing about it is that i've entered my GF's private account in FL just for fun. And she gets 10% engagement with quite low quality pictures on 4k followers.
I realized that i follow the followers of a big german youtuber with her account.
For all the other accounts i usually use same niche theme-Accounts instead of known people. Any experience with the difference of both?

1 post per day is the least I'd say someone should do. 2-3 daily is good. On some accounts I do as much as 40-50 per day with good results. (People tag their friends in the pictures and that gets me a bunch of followers, however this works only if you're at least 25K+). Honestly.. once per week is pretty terrible. To post on 8 accounts for me in different niches daily, it takes me less than an hour to schedule everything for the day. It's not much work.

Yeah, i thought that its terrible allready. I was just wondering what it should change.
Of course there will be some that check the account more recently if i post more. Is that the big change? To get the people to come back to my account every day on their own instead of trying to engage them with the picture?
Because i dont see why posting more recently should gain me a better like/view rate. And also i dont see why my Gfs accounts gets 10% with a weekly post and the other accounts get 1-2% all with high quality pictures. So there must be a difference that I couldnt discover until now
 
Its usually perceived in the world of Instagram to get 10% of likes of your follower count e.g. 1 million followers = 100,000 likes is a good engagement level to have.

Would be pretty hard to keep that type of engagement rate on 1 million followers :p

Engagement does matter but if you're not making sales/revenue out of it, then it wouldn't matter if you had a 30% engagement rate.

Just my 2cents.
