Do you think adding your site to GWT is unsafe?

I would avoid it. Because when one of your websites got penalize, they may check your other sites.
Of course gwt does provide some valuable information, but there is still a risk.
May be creating several accounts for each website will be safer.

It does not matter whether you use or not using wmt, as long you do not connecting all websites with the same wmt account.

Yes, its safe but do not add more than one site into the same account. Not adding your site on WMT does not mean Google does not know about your activities.

It depends, If i was doing heavy shelling in churn and burn or spam backlinking, i wouldn't add it there. But if you pamper your site with some clean white hat PBN kind of thing, then there is no problem..

they lookup so much information about the owner that I think it's necessary to use a proxy for each different GWT account. I could be wrong so don't take my word for it.

Google gives you information about your site's organic performance through webmaster tools, all of which they already have and are aware of. Therefore, avoiding webmaster tools won't protect your site UNLESS you already have another verified site in the same account and you don't want to link both sites (in which case you could open a new webmaster tools account).

If you feel any negative seo impact on your site or huge drop in rankings then add it to the system to find what's wrong it may be helpful in that way atleast.

IMHO if your site is "white hat" then fine. Keep your pure black hat stuff well away from any Google account though.
