I'm going to start building multiple websites and YouTube videos for different affiliate marketing products. Is there anything I need to do with protect my website, ip address etc... to ensure I don't get penalized by Google for all the Websites and Videos I'll be making?

Depends what you are doing. Google are not stupid. If it is available to the internet to view the it is available to Google also. It's not that you get penalised, it's that your site gets correctly categorised and ranked accordingly.
Generally as a rule of thumb google are adopting a man in the middle view of affiliate sites, in that they just get in the way the consumer and the content they are looking for.
Your post was quite lazy to be honest, or at best not very clear. Why would you be penalised because you make a lot of sites? Or are you intending to make some kind of spamming multiple variants of the same site type nonsense? If so then all your websites all on the same server are going to be an obvious giveaway.
Your questions might be better served by actually writing a little bit more detail than derp google, derp websites.

No need to call me lazy or be rude. I'm new, so I apologize for not asking correctly. Anyways point taken.
To be more specific does it matter to google if I'm creating 20-30 websites for different products I'll be promoting. Will they find this to be a red flag that it's all coming from one ip address or youtube account for videos?
