don't install shit on their computers, they will fuck with it, know your watching and may piss you off about it.

Monitor it on the router level, get a Untangle box or something and log all the http request headers(don't log all the actual traffic. It may be illegal and would take a shitton of space depending on activity)

Sounds like you need a "hall monitor" to make sure everyone is doing their job lol.

Just for kicks you could decorate your office wall with computer monitors, get an ass load of VGA/DVI cables, and connect every monitor to your employees computers. Then, when bored, you could just look up and see exactly what everyone was doing haha.
