Hello,
I wanted to know if it's possible to run a proxy service on a remote dedicated server?
I understand all of the technical sides it - I've set up a local server on my home computer. The main question is - how do I get 1000s of IP addresses assigned to my VMs?
Any help is appreciated!

Yes you can run your proxy server in a dedi or vps.
Actually you will need a linux box where you have to setup squid preferably. You will assign at it ip's you will rent. Finally note that your proxies HAS to be authenticated in order not to have problems with hosting companies.
If you are interested you can check my sign.
