If this letter converts as well as some of the guys have said it is I would be worried about being able to handle 30 new clients all at the same time. The SEO part you can delay new clients with for a bit, like start getting paid but only start working on it in a week, but just the sheer amount of meetings you're going to be getting might be overwhelming and cause them to see you as a scam artist. Make sure you're ready to be able to handle all the new clients before sending all of them at once. I would send out a portion once a week which would give you a full week to handle all the new clients and not have to postpone any meetings. I'm sure once they read the letter they will want to see you asap, making them wait a few days will cause the whole excitement that the letter generates to wear off
Another thing, try group all the closely related businesses into each batch your sending out. That way if one "dentist" decides to sign up you don't need to see any other dentists, unless of course you deem it ok to help more than one client for the same keyword. I feel if you're really trying to setup a long term business that helping out more than one client for the same keyword could make clients angry if they found out about it. There are so many niches for this that it really makes sense to keep it simple and only work for one client per keyword set. Would also be cool to tell the dentist that you actually have another dentist booked for a meeting on the day they want to see you so that they feel you are high in demand

Anyone know where you find the actual address you can mail the packets to? All the businesses I've checked so far don't list their postal address?
Where are you looking for the addresses at? Out of their website, Google Places, Yahoo Local, TripAdvisor, CitySearch, Yellowpages, a google search, WHOIS query, etc. there has to be one bound to be listing the address. Finding the address is the easy part.
