I have read that you should not put all your sites / domains on one host, for instance i am with Hostgator, have around 10 sites at the moment, but want to expand to many more. What is the reason for not staying with one hosting company?.,Does Google penalize you for this and why?

The biggest reason is for people who are spamming for their backlinks. Google can notice the patterns and penalize all your sites. Keep in mind this can also be done via name servers. If you are running legitimately you have nothing to be concerned about.

I had up to 65 sites and domains on one shared hosting account before dropping them and never had any problems, but on another account I was suspended for using up too much CPU due to one site's plugin, so it's all about how many resources your sites use collectively.
