Is there any way of using Paypal without displaying your name?

Does Fiverr show your name if someone pays you?

It's called the IRS and tax laws, it is nearly impossible to get paid completely under the radar unless you go work for a landscaping company.

So do you mean to say you report earnings even when you are doing something not in your own name? (say the simplest example here is having multiple adsense accounts in names of friends of family)
