how many links to rank in google

Could i get a rough estimate of how many links to rank in google for a particular niche?

It depends on quite a lot of variables.. just saying "how many links" do I need.. isn't helpful at all. Would need your website, what keywords you are targeting, who is your competition, what time frame are you looking at etc... etc... etc...

Ranking is Google is all very straightforward - sometimes I wonder why this forum even exists.

You just need a certain amount of links as you obviously already know.

For #1 Rankings:

Weight Loss - 7 links
Forex - 19 links
Web Design - 4 links
Gardening - 2 links
Travel - 9 links
Hotel Reviews - 8 links

but its not about how many links you have, thats just a small factor.
