If I'm trying to rank for 'breakfast tables,' should I also back link with the anchor text 'breakfast table' or will the former (plural) be enough to cover both searches?
 
I would anchor the exact keyword "breakfast tables" however you can anchor other keywords as well, make sure you are targeting those keywords as well and its in your website page.

Specifically if you are going to try and rank breakfast tables, you should also add these ancillary keywords:

breakfast table setting, dinner table sets, dinner table, ikea dining table, dinner tables, home furnishings, round table, big lots furniture, furniture world, ikea breakfast table


 
If I add all those extra word combinations, that would dilute my back links wouldn't it? Instead of everything focused on breakfast tables, I'm now spreading the backlink/anchor text to the other words. Am I missing something here?
 
Bass is right about adding similar words, but you don't want to spread yourself to thin with anchor texts. Look into LSI to get a better picture and don't forget to target BUYER oriented words as well, such as; cheap, buy, low cost, etc.
 
Its also good to vary your anchor text as well. If all of your anchor text are all the same, that can trigger some filters.

Depending on the size of your site it may not be a good idea to use too many keywords.

When I build a site, I build it to generate not just traffic for my main kw but I aim for related keywords as well to get crossover traffic... I generally shoot for 3 KWs a page when I build a site because if they are looking for green widgets, they will certainly be interested in blue widgets as well and the longer they are on the site, the better chance I have of making money from them.
 
In my experience, using your exact keyword is most effective

exactly. I second to this. Should focus on the core KW you targeted until positive result is confirmed
