To the best of my knowledge, most popular payment gateways needs your KYC before you can open and verify your accounts. I'm not sure if there is anyone that will allow you to open a verified account without your personal details for KYC.

yes it depends on what kind of payment you want to receive

Maybe some crypto gateways can be more flexible, but for card payments most serious PSPs will ask docs sooner or later. Even if they say no KYC at start, they can still freeze/ask later once volume comes in. For ASEAN maybe check local PSPs too
