I've been only doing title and description optimisation since I schedule the pins and there no option to add alt text on bulk schedule unless i do it manually. Am i missing out like heavily in terms of ranking leverage?
 
Yes, alt text helps ranking indirectly because it tells search engines what the image is about and can improve image search visibility and accessibility, but it is not a major ranking factor on its own.
 
You need to keep an eye out for new updates or policies to help your channel get better traffic.

are you just copying the description into the alt text field when you do it manually or are you rewriting it each time

You are not missing out, just give it some time
 
Alt text helps but its nowhere near as important as title image and description for Pinterest ranking. I wouldnt waste hours manually adding it unless the account is already highly optimized everywhere else. More useful for accessibility and extra context than massive ranking gains.
