My E-commerce website is not ranking at all

Hello, as the title specifies my e-commerce website is not ranking keywords/impressions/clicks and it's almost one year since I started. As seen in the screenshot, after the update from Google on 18-20 december which added a new layer of protection everything went a little downhill but even before that it was hard to rank. We got over 200 products/articles and mostly sell in Germany but I have to add the fact that I don't speak german so my content (all informations/tehnical informations/meta descriptions) is made 100% with AI but everytime I'm trying to make it in a manner to not seem/feel AI. I'm mostly running Google Ads which bring some conversions but I don't get anything from organic traffic. The core web vitals are somehow starting to revive because I've been fixing page speed but I'm running out of ideas of what to do. Any kind of information or help is highly appreciated and welcomed.

Looks like your traffic took a hit most likely due to the December 2024 spam update. There was a core update from December 12-18. They released the spam update right after that which coincides with your traffic reduction on December 20.

What are your current positions for the targeted keywords?
How about the competition? What type of niches/keywords are you targeting?

You can't magically rank for a bunch of keywords just because you made pages for, or because the website aged for a year,
You need to have higher authority to compete (mainly), as well as having a proper plan & optimizing the website for all of other SEO factors

I've got one keyword ranked 2nd and the other ones are just randoms at 85/80/65 that are not that relevant. The niche is tubes/bends/branches/clamps and other pipe components but specifically Absaugrohre in german. We've been optimizing mobile friendliness/page speed/internal linking/images/user experience/core web vitals/title tags and attacking the proper keywords as well as trying different ways to approach content to rank, would backlinks have a positive effect on this issues or possibly trying to change the content with Grok as it provides more natural/different touch ?

The good news is that the website is less likely to be penalized,
Algo penalized websites tend to get deindexed, totally vanishing from the SERPs, or ranking really low for easy niches/keywords (idk if that's the case),

It's most likely lacking authority, which makes you primarily rank, you need to invest into links if you want results, it's more about the ROI,
That will be for sure if the SERPs are filled with pages/websites targeting the same keywords (same products)

Idk your approach to get the content. Poor AI content with basic prompts doesn't work as well as per my testing, which is commonly the case for others as well, even if you think it's good, it could be seen as low-quality & non-original for the bots/algo

That's just something that's required to be done, it won't necessarily make you rank,
You have to make a proper analysis of the niche & competition as a whole and check what you're lacking compared to your competitors

Your website has low authority according to the Semrush screenshot. Definitely build links.

However, Google officially said the spam update of December 19 2024 was not backlink related. So if the spam update is why your website took a hit, like what it appears to be, backlinks may not totally solve the issue. Learn all you can about that spam update and maybe something will click for you with what you know about your website.

AI-generated content can sometimes feel a bit off, which might hurt trust and rankings. Google likes content that sounds natural and helpful, so improving it with a native speaker and adding some unique touches could make a big difference.

If your e-commerce site is not ranking, there is most likely a problem with indexing, content, backlinks or technical SEO. First of all, check these steps:
Check URLs in Google Search Console: Search “site:domain.com” to see if your pages are indexed.
