Hi, recently 2 of my domains have been getting taken down by the canadian government (I am in the cannabis e commerce niche in CANADA)

I'm now looking for a the best domain registrant that will ignore all orders from the canadian government. Also which TLD is the best to use in this case??

I've read that njal.la isn't that great anymore and will still take your domain away.

Also looking for good hosting as well..any advice is appreciated.

Ignore order from the government?
I don't think anyone can do that if request comes via channels. Maybe chinese , Russian, or Iranian domain registrar can do that which has not treaty with Canada.

You can try reading what people have said in the past, as this has been commented on before. I hope this work out for you as well.
