I'd like to have a cloud platform to use as a backup to save my photos, files, etc

What is the best OneDrive alternative? Some aspects to consider are: privacy, price, GBs available, mobile app, etc

Proton for convinence but it's pricey if that's the only thing you are going for and not it's ecosystem.
Otherwise, I would say, stick to OneDrive and add cryptomator ontop of it.
 
If privacy is a true concern, you're better off self-hosting or buying your own hardware/NAS.
onedrive dropbox etc all scan your files, may delete your files and account at will.
many cases of people hosting "vaccination casualty data" and having their entire accounts disabled. or the doctor who uploaded pictures of his kids genital rash and had his entire google account with 10y+ of data shut down with no recourse.
you can selfhost owncloud, nextcloud, syncthing. or buy a NAS by qnap/synology if you don't want to roll-your-own.
 
I have had multiple external hard drives die over the years. If it means a lot to you, then you should get an network external with a redundant drive to back up the backup. Though this is overkill for most people. But I have been disappointed with the standard consumer $200ish external hard drives. All fail without warning and virtually no way to fix. them Just paperweight.

For all those naked photos you have, probably best for your own external drive.
