If you have WordPress site then they can get your email and name. If not then you should move to a DMCA ignored offshore hosting service. Also, consider switching your domain too to the same provider

How are you paying hosting and domains? With credit card? If yes then your hosting company and registrar have your real identity. So if they contacted them they may have given your real name.
If it's the same email that you used on WordPress and that you got the copyright-related email on then go to - your domain + wp-admin/users.php and change it
Yes, i will change my administrator email adress from gmail to custom email address hosted on thrid party, put it in contact form yes it's better than exposing my main gmail
