A quick question, I have an e-commerce store, and for example, I sell angels (along with other items) and in my country 'angels' has 165,000 searches a month and low competition.

Is it ok to use that KW multiple times on all products that are angels, or should they all be different?

If a particular group of products are 'angels', it is not wise to have separate individual listing. They should all be listed as one item. Doesn't make sense to list them differently.

And flooding your product listing with one keyword all over the place would be catastrophic for your SEO campaign.

But they are all different styles, makes and sizes, a bit like footballs, some will be addidas, Nike etc.

As said. You can use it but have a differnt secondary keyword
 
My suggestion is to add different keyword for every product because it might cause keyword cannibalization in future. Generally, If you use same keyword for multiple products every page will start ranking on SERP and they start grabbing the traffic. So try to make use of different keywords or related keywords rank safer on Google SERP.
 
I thick it's fine but not okay as there would be many people using different KWs to search. So my advice would be to add different and unique keywords

You can, but mix it with different keywords specific to each of the products.
