How many organic hits a month?

Your question is not clear. There's no limit on how many visits a site gets a month. If the traffic is organic, there's no need to limit it.
 
It's not about the traffic, but about the traffic value. If you receive 100 visitors per mo, but these visitors generate revenue, this is good. If your site receives 1M traffic, but no conversion, it's a waste of time.

Hmmm. . . I have a blog about parenting and I am sure it will get a lot of traffic (in time) but I am less sure how to create revenue. I have done some research and think that when I build visitor numbers, I can start using sponsorship, maybe some affiliate products etc.
 
It depends on your niche honestly! For very high ticket products, even a handful of highly targeted organic hits/visitors per month can be considered to be "good".

But if you need 100 visitors to make $1 and you need the same $10k per month in order to consider your site successful... in this case you would need 100 visitors x 10,000 = 1 million visitors per month.

So, as you can see, everything's relative to...

- your goals (what you consider successful, for some people $500 per month means success, for other people $100k per month means success)
- your monetization method(s) (some methods / products / services only pay few cents per click / lead / sale, while others can pay $100s or $1000s)
- your conversion rate (on some products / services you can make money for every 10 visitors, while on other products / services you might need 1000 visitors to make money)
- the quality of your traffic (traffic that has zero interest in anything you offer on your website will make you no money, while traffic that ACTIVELY looks for what you're selling / advertising will make you lots of money)
- other factors (your selling skills, how well you match the source of traffic with your landing page, sometimes the niche itself plays a huge role in conversions and profitability, because some niches are simply better than others, for example you'll always make more money in business, health, financial, or tech based niches than in arts / crafts / entertainment niches like, I don't know, making memes for example, or learning how to draw, or free software download, etc)

My blog is about how parents can help boost wellbeing and learning in their children (of elementary and middle school age). $500 - $1000 per month would be a good figure for me as I already have a good full time income. . . Just not sure how to best monetize the site moving forward.

I am open to other education-related niches that make a lot more money (I have been teaching and leading in schools for 20 years), but I have been going around in circles about which niche is a. most enjoyable for me/most aligned with my skills, and b. which us most profitable -- because, to be honest, I want to treat it like a business and businesses need to make money!

Any advice in that area also much appreciated!

Go ahead and sign up for Google Adsense bro , you monetize by CPC on indexed keywords. Also Amazon affiliate products like parenting books or mental health for parents you could also add links to articles. Another way to monetize is to build up the site then sell for couple K
 
-_- I consider that a scam , this is why I do CPA. From 100k traffic can make $5-$10k
Again i said its depend on niche of website if its an general blog you cant sell anything using CPA. There just adsense only method for this or if you have micro niche website you can sell CPA offers/

in this case you can easily sell your own product for 100% profits...

You said you'd be ok with $500-1000 per month, this means that if you have a product that sells for $9.99 (pretty easy sell for someone as experienced as you are in your niche) at a conversion rate of... let's say 2% (if you create high converting landing pages and know how to sell you can easily get 5% conversion or higher)... this means that you make 1 sale for every 50 visitors, which means $10 for every 50 visitors, which means you need to reach 5000 visitors a month to make $1000 a month in selling your product.

To get 5000 visitors a month is not hard if you put in the work and target the right keywords and - particularly important - if google doesn't fuck up your site out of sheer fun like they do lately. Or you could focus on other sources of traffic like reddit / quora / pinterest (although these might be time consuming), or you could go for paid ads (quite a few options around the forum for 300 Euros threshold GAds accounts if you take the time to search for them, I've just used one of these last week and it worked, you pay $80-100 and you get 300 Euros / USD worth of spending and if you do this repeatedly... well, you're bound to turn a profit eventually.)

Regarding profitability, again, if you sell your own product (an ecourse, or even a simple PDF marketed as an ebook) you can easily put a 20-30 page PDF together on valuable stuff in your niche that you know people pay $100s for somewhere else, hire someone off Fiverr or other freelancing sites to create a nice ebook cover (or some marketing assets for promoting on social media / in paid ads networks) for like $50-100 (you might pay even less than $50 if you search well enough) and then upload the PDF to your server and link to it from the sidebar and from other places on your site that it makes sense (at the bottom of articles, for example)

A website which receives consistent & steady flow of organic traffic, is likely to be considered as doing well in SEO & online Visibility. If a website receiving high volume organic traffic that is also highly targeted to their niche is also considered as a strong efforts in SEO.
