Is it a good idea to add sub-categories on e-commerce stores?

Hello,

We have multiple e-commerce stores and most of them rank for long-tail keywords but don't get a high position as it's the first subcategories that rank.

I want to know if by adding sub-categories for these menus, I can rank better for these keywords and would you recommend it for e-commerce store.
