Not a specific one.. Just want to know the ip used if i send any request to any api..

I know my ip.. I just added a proxy to postman and i want to check if postman are using that specific proxy ip

The kind of information you should have added in the initial question. Go to a site like webhook.site and get a URL then send a request from postman to that URL.

Another question : can the end point tracks my fingerprints if i send a request from postman like they do with browsers

I'd imagine they will see the postman user agent but not so much of a trackable finger print. The clear lack of will be obvious that it's not a normal request.
