What is your goal when using Cloudflare? For PBNs or just for your money site?

Don't forget you connect to the closest Cloudflare "server". If you would request your website from a different location you will see a different IP address.

I use it for both my PBN and money sites. I prefer it for its features such as security and cache.
What I want to know is, does google know the source ip address of my sites? I don't want to buy a private ip for nothing.

Google will not know your server's IP address if your server doesn't reveal it to Google if you are using Cloudflare.

For PBNs, you should not have all of your domains in Cloudflare as it's unrealistic, and you want diversity.
